Valle del Cauca

Valle del Cauca is one of 32 departments of Colombia, located in the southwest of the country. Much of the department is between the Cordillera Occidental and the Central Cordillera of the Andes, in the geography of River Cauca where its name comes from.

The Valle del Cauca kitchen was created in the center of Valle del Cauca in environs of Buga and Cartago and the Pacific region.
